Episode 5 - Spanakorizo (Spinach & Rice with Egg)Ingredients

800gr spinach

1 red onion

1 red pepper

2 cloves of garlic

2 vegetable stock cubes

250gr mushrooms

1 cup of long-grain rice

3 eggs

Olive oil

Paprika and pepper

Method 

Wash the spinach. Heat some olive oil in a pan and wilt the spinach.

Chop the onion, red pepper garlic and mushrooms and place them in another pan after you heated some more olive oil.

Fry the vegetables until they get soft, then add the wilted spinach, the paprika pepper and the stock cubes.

Follow by adding the rice, you might need to add a little extra water, stir and let it boil for about 20 minutes, until the rice is ready.

As soon as it is done, place it in a baking tray, whisk the eggs and add them on top.

Place in a pre-heated oven at 180 for 20 minutes, until you get an eggy top layer.

 

If you like you can mix the eggs with the spinach and rice in the baking tray before you bake it.

Sometimes I add feta cheese or grated cheddar cheese on top of the egg.
