Episode 2 - RavaniIngredients

1 cup of desiccated coconut

1 cup of semolina

1 cup of self raising flour

1 tsp baking powder

½ tsp madagascan vanilla extract

250gr baking spread

1 cup of sugar

4 eggs

250gr Greek style yogurt 

For the syrup:

550gr sugar

450ml water

½ lemon juice

1 slice of lemon

1 tbsp of mastic

 

Method

In a big bowl mix the butter and the sugar, using a hand mixer, until its blended together and having a nice fluffy texture.

Add the eggs and follow by adding the yogurt while you keep mixing.

When all the ingredients are well mixed, add the semolina, the flour and in the end the vanilla and coconut. Keep mixing until you get a slightly firm butter.

Place in a rectangle tray and bake at 180 for 30 minutes.

When the cake is ready, cut it in pieces and leave it to cool down for a while.

For the syrup:

In a saucepan, pour the water, add the sugar and the lemon.

Boil for 5 minutes in low temperature.

Add the mastic after it's boiled

Pour the syrup on the cake, leave it to soak and sprinkle some coconut on top.

 

You need to cut the cake when it's ready so it's easier to soak. Mastic gives an interesting twist to it but you can skip it if you like. Serve it with vanilla ice cream.
